Passata

Passata is a mellifluous word that usually means a puree of lightly cooked tomatoes, though some people make passata without cooking. Both versions are components you would make during peak tomato season and then preserve in jars for use later in the year.

I don’t make either version, for no reason other than a preference for chunky sauces rather than smooth ones. I also don’t actually can tomatoes very often, preferring to make a basic tomato sauce and freeze it or freeze raw tomatoes to use in various ways later, and then use store-bought canned tomatoes during the off-season.

You will find commercial products labeled “passata” and “strained tomatoes”; Pomì and Mutti are two imported brands with wide distribution. Some brands have a more cooked flavor than others, but all are cooked to some degree, because the canning or other packaging process involves heating, as does home-canning.

Despite its not being part of my tomato-preserving routine, passata is a useful pantry item and a good way to capture your harvest.

To make your own passata, cut your tomatoes into large chunks, pile them into a large pot, and bring the fruit to a simmer over medium-high heat, stirring frequently with a long utensil so you can reach the bottom of the pot. You can add a bit of water to the pot to get things moving, if you like.

Once the tomatoes are slightly broken down (skins are curling, flesh is losing its shape), let the tomatoes cool and then put them through a food mill to remove the skins and seeds. Alternatively, puree them in a blender or food processor and then strain. Can the passata in pint or quart (500 ml or 1 L) jars, following a good canning guide. Your canned passata should be good for 1 year.
